I just discovered “Utreon” whilst looking for alternatives to YouTube. You do need to give them your birthday and email, but that’s it. You do have the option to give them your phone number. A couple of downsides is that they email you a new 6-digit code every time you log in and it is still in beta, so you have to email them if you want to upload videos.
