Minecraft Modpacks: Why I find more fun in old ones

Modern Minecraft modpacks make me bored. And I think many echo this sentiment. It used to be that modpacks were full to the brim with mods and experiences, with many even having quests. Some good examples are RLCraft, Stoneblock, and basically any technology modpack. These packs are fun because the mods they have are fun. So what changed?
