I made some wild rose syrup back in June, and in July I got sick so I couldn't bring myself to make something to eat it with, and in August I was still kind of recovering, and now that it's September it was around 3 months old and I didn't want to take the chance of it being bad (it had little bits of petal suspended in it, so, there was organic matter that could easily start to break down).
SO! I do plan on making rose syrup again sometime, but my two options are:
1. Buy more dried rose petals and use those to make some whenever I want.
2. Wait until next year and collect more wild rose petals.

You can pasteurize it and keep it in a sealed jar, just like jam ! I made some rose syrup a long time ago and I kept it for years like that, it's great :D
