Honey Cake Recipe!

Hi! I originally found this recipe clicking through Pinterest a while ago, and I finally decided to try it. Really, I should have made it last week for Summer Solstice, but I forgot 'XD.

I rewrote the original recipe because the wording confused me a little bit, and there was helpful information in the comments that I didn't see until after I put it in the oven. All credit and thanks to the original author, and I highly recommend you take a look at the original article! That website is full of useful stuff.

Anyways, onto the recipe!

Ingredients:

3 Cups All Purpose Flour

3/4 tbs Baking Powder

1/2 tsp Baking Soda

1 tsp Salt

3/4 Cups Sugar

2 Sticks of Butter (softened)

4 Eggs

1/4 Cups Honey

1 tbs Vanilla Extract

1 Cup Milk

Tools:

Cake Mold/Cupcake Tin

Medium Mixing Bowl

Large Mixing Bowl

Measuring Spoons and Cups

Whisk/Spatula

Cooking Spray/Oil (to grease mold)

Stand Mixer (optional)

Notes:  

Honey caramelizes faster than sugar, you'll need to keep an eye on it while it bakes.

If you use a silicone mold, put it on a cookie sheet to give it support in the oven.

This recipe makes extra batter. I put my extra in a cupcake tin, but you can do whatever you like with it.

Be very careful if you change the ratios. The current ratio works very well, but it does make more than you need.

Brush or drizzle the cakes with extra honey and put them back in the oven for 10-15 minutes for a crispy outer shell.

My cakes were done at 40 minutes; but you'll want to check on them at 30.

Pairing:

Serve with fresh fruit and milk or mead (honey wine). I also think homemade vanilla ice cream would pair nicely.

Instructions:

Preheat oven to 325 degrees Fahrenheit; lower if your oven runs hot.

Grease cake mold or tin and set aside.

In medium mixing bowl, combine Flour, Baking Soda, Baking Powder, and Salt, and set aside.

In large mixing bowl, cream Butter and Sugar together until fluffy.

Beat in Eggs one at a time.

Add Honey.

Beat in Vanilla.

Slowly add flour mixture, alternating with the milk; beat until just smooth. 

Pour batter into greased mold or tin.

Put in preheated Oven and bake for 30-40 minutes, or until a toothpick inserted into the cake comes out clean.

Remove from mold once cool enough to handle.
