the sponge cake:
The proportion for a sponge cake looks like this: 1 (flour) : 1 (sugar) : 1.7 (eggs)
so for a mold with a diameter of 18 cm you need 4 eggs (weight approximately 240 g) and for the proportion we need 144 g of flour, 144 g of sugar.
at first make sure to properly mix eggs with sugar using a mixer. usually it takes 10-15 min to mix it to the state of thick cream.
advice: make sure that your bowl is dry and also can add a pinch of sault (it should make the mass thicker faster)
you should mix it to the state that u can turn the bowl uside down and it won't fall haha.
!than comes the most important part! u need to add flour. it is important because u need to use a paddle (or any other comfortable thing to mix it, i just like doing it with a paddle the most) to mix flour with egg and sugar mass. at this point u can add a bit of lemon zest to make it smell like lemons :3 mix gently in a circular motions until smooth. don't mix it too long or the sponge cake will not rise when baking. pour the dough into a prepared mold (the walls and bottom of the form are greased with butter and sprinkled with a thin layer of flour - the so-called “French shirt”).
Place the sponge cake in an oven preheated to 175 degrees Celsius on a medium level. It takes 35-40 minutes to prepare. u can check the readiness of the cake by a wooden stick or toothpick. pierce the cake in the middle and if a toothpick comes out dry, the sponge cake is ready.
while the sponge cake is cooling down we can prepare syrup and cream.
Syrup:
100 ml of water,
80 grams of sugar
lemon wedges
for syrup u boil water with sugar one min and than add lemon wedges. u can also add a bit of lemon juice.
when sponge cake and syrup are cooled down u should cut the sponge cake in three layers and spread the syrup on them. it will make them wet and more taste like lemon ^^
lets leave the sponge cake with the syrup to have fun while we cook the cream.
Cream :
250 ml of water,
2 yolks,
25 grams of starch
200 grams of sugar
250 grams of butter (82.5%),
zest of one lemon,
juice of half a lemon.
okay here it will be a bit harder but we will deal with it. at first we make a lemon custard. we take a pan and fill it with water. in spare bowl we put 2 yolks and add few spoons of water from the pan to mix them easier with starch. in the water in the pan we add sugar and mix it nicely together on the stove. boil this syrup for 5 min. while this syrup is cooking we will add zest of one lemon and juice of the half of a lemon to the yolks with water. mix it mix it >< then we add into our bowl 25 grams of starch. mixxx againn ʚ(。˃ ᵕ ˂ )ɞ now we should add syrup in small portions to our prepared mass. make sure to mix it nicely while adding the syrup. then we put a liquid we got in a pan and on the stove over low heat and stir constantly until it comes to a boil. mix it while it is boiling on low heat for 2 min. then I advise you to immediately strain the cream from the lemon zest. leave the cream to cool down and when it is cooled down add it to the soft butter in small portion and mix it using a mixer through the process. the cream must have fluffy and buttary texture in the end.
so finally the last step!!
to assemble a cake like a constructor ahaha spread the cream on each layer. also u can decorate it with chocolate and gummies like i did.
