learning to pair cheeses

good afternoon ~ 16:00. i've begun learning how to pair cheeses. honestly, the idea of doing this has intimidated me for a long time, but i decided in 2024 i'm gonna try to improve all of my skills the absolute best i can, including mundane things such as cheeses & wines. 

 despite growing up eating artisian cheeses, it seemed to scary to step out and do my own thing with it. even though, when i was 12, i had experimented a little bit by pairing gouda & other cheeses along those lines with nuts and seeds, nowadays im learning how to pair with fruit, honeys [etc.] heres my first attempt of 2024 ; fresh goat cheese + honeycrisp apple + honey (clover? i forget what type, but i got it from the farmers market a while back.)

theres still a lot of learning to do, but so far this is really delicious ~ today i went out & bought some brie imported from france that i'm going to learn to pair today. my plan is with bread, cranberries, some citrus & a glass of kompot that will include ginger + tumeric. my next ultimate project is cultivating fresh wine made without brewers yeast, over the course of 1-2 months.
