Two of my friends are allergic to eggs but still love cake, so this recipe was originally for them but it's one of my favourite cakes I've ever made still. It's a very easy and quick cake so I'll make the recipe quick as well, good for beginner bakers.
Afraid this is just a sponge recipe, I'm not too great at making icing just yet aha. Any other chocolate icing recipe should do though.
Easy chocolate cake
Dry ingredients
225g/2 cups plain flour
1tsp baking powder
1/2 tsp bicarb soda
42g/1/3 cup cocoa powder
250g/2 and 1/3 cups sugar
1/2 tsp salt
Wet ingredients
300ml/ 1 1/3 cups water or milk
100ml/ 1/2 cup oil
1tbsp of lemon juice or apple cider vinegar, or 1/2 tbsp of each if you want I'm not judging
1tbsp vanilla extract
1. Sift all dry ingredients into mixing bowl and then mix together
2. Mix or fold with dry ingredients until all incorporated
3. Lubricate, or use baking paper, and pour into cake tins, should be 30 minutes but sometimes it's less so check regularly. Then just take it out, cool etc.
