My cinnamon banana bread recipe

Not gonna blow smoke up my own ass and say this is the best recipe ever but I think it’s good :)

Will also use both metric and American measurements for you ‘mericans 


Cinnamon banana bread 

Ingredients

Sponge

240g or 2 cups flour 

1 tsp each of baking powder and baking soda

200g or 1 cup sugar

4 bananas (browning)

1 egg

40g or 3 tbsp melted butter

1 tsp vanilla extract

Small pinch of salt


Cinnamon mixture (separate bowl) 

30g or 2tbsp melted butter

40g or 3tbsp brown sugar 

15g or 1tbsp cinnamon or more if you like it extra cinammony 


Baking time 1 hour at 180°c or 350°f


Method

1. Sift all dry ingredients into mixing bowl including sugar and fold together 

2. Melt the butter for the sponge until just melted

3. Squish in only 3 of the 4 bananas, save the 4th for later, then add the egg and fold, then add the melted butter and vanilla, fold until everything is incorporated 

4. (For cinnamon mixture) Melt the remaining butter. Whip out a regular bowl, mix with the brown sugar and cinnamon

5. Get out a regular loaf baking tin and line with parchment paper

6. Add around half of the mixture in the tin, then add a few little dollops in different places of the cinnamon mixture, then (I use a chopstick for this) swirl it around with the cake batter, don’t mix too thoughourly/incorporate it entirely, but it should result in a nice few random patterns of the cinnamon mixture in the cake batter

7. Then now comes the 4th banana, squish it slightly until it splits off into chunks and then put it on top of the mixture in there so far and make sure to spread the chunks out, it makes sure you get some nice gooey chunks of banana in the middle of the cake :) 

8. Then add the remaining half of the mixture on top of that. Repeat step 6 with the cinnamon mixture for the other half of the batter on top

9. Now just an hour in the oven at the temps listed above and then you know the drill cool it down on a rack and then it should be good to eat
