traditional bread

hey everyone! welcome to my blog. :D

do you like bread? what is your favorite bread?

Today I wanted to introduce you to the coppia ferrarese (ciopa or ciupetta in dialect), a typical *IGP bakery product from the city of Ferrara in Italy.

The history of this bread is ancient, in of the most recent form we have the first evidence of it in 1536 mentioned in a book by *Cristoforo di Messisbugo which tells of a banquet on the occasion of the Carnival offered by Messer Giglio to the Duke of Ferrara. The shape of the bread pays homage to the blond curls of Lucrezia Borgia, wife of Duke Alfonso d'Este, two important figure of the Renaissance.

Before the 12th century the bread was packaged like a loaf, without hems, borders or embroidery.

A 1287 statute ordered bakers to make bread:

- with edges

- didn't sag when cooking

- of a specific weight

- well done

- when completed to cover it with a white cloth

- affix a seal identifying the manufacturer

- the ovens didn't have to be located in the busiest streets so that the bread would not get dusty

if the bread wasn't made by the bakers in these ways, a fine was imposed.

Ingredients: 1 kg of type “0” soft wheat flour, 350 g of water, 60 g of pure pork lard, 30/40 g of extra virgin olive oil, 100 g of natural yeast, salt, malt.

Processing: the ingredients are processed in the mixer for 15/20 minutes. The dough is "stretched" in the cylinder with 15/20 passes. It is cut into strips and fed into the pairing machine. The bread is placed on wooden boards covered with a cloth and placed in the leavening compartment for 70/90 minutes. Firing takes place in ovens with a fixed floor (heat from bottom to top). It weighs between 80 and 250 g.

it is still a much appreciated bread and bought in Ferrara and not only but also in the province and in the nearby cities.

*IGP= (Indicazione Geografica Protetta) it is a certification that identifies a product originating in a place, a region or a country to whose geographical origin a given quality, reputation or other characteristic can be attributed.
