Baking a lemon loaf

I finally did it! I baked the lemon loaf that has been living in my head rent free for the past week or so ( or longer if you count the fact that I've bought lemons multiple times over the past year but never did anything with them).

Usually when baking, it takes some trial and error as some online recipes only show the measurements in cups as opposed to grams causing me to make mistakes when calculating. Or due to a different quality in ingredients used by the author.

During the process I thought to myself multiple times that I had already messed up. For example: "Oh I beat the eggs for longer than 2 minutes the batter is going to be too stiff/airy" or when I put it in the oven and it kept rising... 

Making icing is always tricky and a bit off a mess, the sugar will fly everywhere and the consistency is quite hard at the beginning.

But overall it turned out delicious and I can't wait to make another one :)
