Hi, everyone!
Dinner for today was a new recipe...cajun chicken alfredo! I made this because it's a recipe that is closest to the dish my mom used to make me. Though, it was my first time making it, it came out great! Packed with flavor and is definitely a new family favorite! So, if you wanna try this new recipe...let's get to it!
Ingredients:
1 tbsp. olive oil
2 lbs. chicken breasts
1 lbs. smoked sausage, sliced
3 cups heavy cream
4 cups low-sodium chicken broth
4 tbsp. salted butter
2 tbsp. cajun seasoning
2 cloves garlic, smashed
1 lbs. uncooked penne pasta
1/2 cup hot water
8 oz. shredded parmesan cheese, about 2 1/2 cups
kosher salt and black pepper

First, you're going to defrost your chicken breasts for 10 minutes. Then, once defrosted, pat dry and season with salt, pepper, and a dash of garlic powder. Pour your olive oil into a pan, over medium heat and quickly sear the chicken breasts on both sides. Put that aside and now you can slice your sausage into however thick you'd like.
Then, add your chicken, sausage, heavy cream, chicken broth, butter, garlic, kosher salt, cajun seasoning, and several sprinkles of pepper to your slow cooker. Let this cook on low for just about 4 hours, or high for 2 -3 hours, or until chicken has reached 165 degrees.
Next, remove your chicken from the slow cooker and set it aside in a bowl to cool. After a few minutes, shred it. I used 2 forks to shred my chicken, it was the easiest method for me. Set aside to let it continue cooling. I also poured a spoonful of sauce from the slow cooker over the chicken to sit in.

You're going to wanna stir in the 1/2 cup of hot water and your uncooked penne pasta, cover and cook on high for about 30 minutes. Just until the pasta is nice and tender! Once the pasta is finished, stir in your parmesan cheese and shredded chicken. Also, sprinkle some pepper and salt to taste. I added a nice layer of cayenne pepper sprinkled on top for a nice kick of heat. Totally worth it, if you're into that!
That's it, your meal is finished...and ready to serve! I'll include a picture of what our bowls looked like. It came out fantastically. And of course, it was so good! Especially with that added cayenne pepper heat, which you should definitely add! Either way, I hope you get to make this wonderful meal and I hope you enjoyed this recipe!
