Pretty basic dinner but figured I'd share since I pretty much freehanded it without a recipe, lol.
Wanted to make a sriracha glaze for some frozen chicken breasts I had, ended up using about half a cup of sriracha, half a cup of honey, maybe a little less than a quarter cup of soy sauce, a few tablespoons of lemon juice, Szechuan 5-Spice seasoning (Garlic, brown sugar, szechuan pepper, and paprika), a dash of garlic powder, and about 2 tablespoons of onion powder (This is all vague guesses, my method of cooking usually is just a big soul read).
Should look something like this:
Then you just put on your chicken and bake for the correct amount of time (this actually works better for fresh chicken, as the mix begins to burn after ~30 minutes of cook time, but I just accepted this fate).
Alongside my chicken, I made some rice with furikake seasoning, and some Teriyaki stir-fried vegetables (vegetables were also frozen, but heat much quicker in a pan!
Here's what the whole thing looked like, said and done. (The rice being a heart was a complete accident!)
It's sometimes hard to get the motivation to make myself something more effortful than microwave food or ramen, especially on a night I'm eating alone, but the microwave in my apartment is still broken and I was hungrier than just carbs would satisfy. Was happy with how everything came out! And it always makes me feel like an adult to be able to make additional servings and meal prep for later :3
