My mom told me to make use of leftover raspberries, and we didn't have any good ingredients to bake/cook anything, so I made a clover club cocktail
Here's the recipe I used:
2 OZ gin
3/4 OZ lemon juice
1/2 OZ raspberry simple syrup (This can be changed based on sweetness preferences)
1 tsp granulated sugar
1 egg white (optional, but it adds foam!!!!)
Any garnish (extra raspberries, lemon zest, or even the crushed raspberries from the syrup)
Put it all together with ice inside of a shaker, shake, and pour
This makes about 1 serving
Simple syrup recipe, can be used for almost any fruit:
1 cup water
1/2 cup granulated sugar
1/2 cup raspberries
Put all ingredients together in saucepan, bring to a simmer for about 5 minutes, or until berries begin to transfer color and sugar is dissolved, then strain! Makes a good amount of syrup, so refrigerate to use later.
