Finished cooking and eating and... I am very satisfied with my creation. It was sooo yummy.
As per usual, here's the link to the recipie I used. The few changes I made were:
1. Didn't use celery, and used a lot more salt and pepper. I just eyeball seasoning most of the time.
2. After step 3 and before step 4, I took out approximately 6 cups of the potato-broth mix and used an immersion blender to blend it until it was smooth. This is so that the potato puree incorporates into the broth, but you keep some in the pot non-blended so there are still some larger potato chunks.
3. In step 4, add the cheese SLOWLY. Add a little, stir until incorporated, add a little more. This is the best way to avoid clumping.
Anyway, now that the recipe is out of the way, time for commentary!
Once I got back from class, I started chopping up my vegetables, and my friend came over to give me some cold medicine since I'm still a little gross. They also got me some cans of soup and popsicles for my throat, which was very nice! Once they left, I finished chopping everything, turned on the stove to start cooking, and...
The fire alarm went off. There was no smoke, the pot was barely warm. Our fire alarm is just broken. It's the second time it went off today. So I had to pause to call the front desk and talk to the cop and building manager that came to the door. Asked if I could. Y'know. COOK DINNER, got the O.K., and got back to it. Was able to complete my dish without further interruption. Me and my roommate have been watching Hannibal, (fun fact: the culinary advisor on the show is world-renowned chef Jose Andres!) so I was like "This soup is gonna be so good. Hannibal can suck my dick" to which my roommate replied "technology is incredible."
She's magnificent, isn't she? I know it just kind of looks like soup, but trust me, it tasted absolutely banging. And there's soooo much left over. I love soups and stews and stuff you make in a big ol pot, so then you can have leftovers. I'm a big leftovers fan.
I don't have classes on Fridays, so I get to relax tonight. Something I've been doing to pass the time recently is I've just been playing Webkinz, lol. Been grinding at the Pizza Palace arcade game. I do also really need to fold laundry, but I'll just do that later >:3

The ingredients are all pretty cheap, couple potatoes and carrots, an onion, chicken stock, a sausage link, and it makes a bunch of it!

It looks amazing! Thanks for sharing the recipe, also "This soup is gonna be so good. Hannibal can suck my dick" and "technology is incredible." are fantastic sentences, I'm gonna use it while cooking to psych me up. Enjoy your Friday!

Of course! I found it a while back and wanted to try it out, but after reading some comments on the site about the cheese clumping problem, and looking at other potato soup recipes, I made my little modifications. I also definitely eyeballed the salt and pepper, probably used more than the recipe says. Now I'm watching more Hannibal.
