Hi, everyone...again!
Two posts in one day, I'm on a roll! Haha, nah...I just also made dessert today, too. I don't have many photos, mainly because I forgot. But, no worries...you can do it with limited pictures. I believe in you! Let's get to it!
Ingredients:
1/2 cup creamy peanut butter
1/2 cup (1 stick) unsalted butter, room temperature
1 cup light brown sugar, packed
1 large egg, room temperature
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp. cornstarch
1/2 tsp. kosher salt
1 cup marshmallow fluff

First, you're going to preheat your oven to 350 degrees, then line two baking sheets with parchment paper. Next, get a large bowl and add your peanut butter, butter, and brown sugar. Using a hand mixer, mix it until smooth, around 3 minutes.
Scrape the sides of the bowl, if needed. Then, add your egg and vanilla extract and mix until combined, around 30 seconds. Next, while your mixer is on a low setting, start adding your flour, cornstarch, and salt.
Next, start scooping out your dough with a cookie scoop, any size works...depending on what size you want. Drop your dough balls onto your baking sheets. Then, flatten with your hand into a small disc, like 3 in. across.
Using a sandwich bag or piping/icing bag, fill it with your marshmallow fluff. Then add about a tablespoon of marshmallow fluff into the center of your cookie dough discs. Now, bring the dough up around the fluff by making a barrier around it, completely covering the fluff. Basically, it'll be a dough ball filled with fluff.

Now, with a sheet filled with fluff-filled dough balls, put the baking sheets in the oven. Let the cookies bake for 10 - 15 minutes. Or until the edges are golden brown. Keep an eye on the cookies to make sure the marshmallow doesn't burn. Here are the finished cookies, fresh out of the oven!

After taking them out of the oven, let them cool for 10 - 15 minutes, before serving. That's it...pretty simple. And the end result is delicious. I hope y'all get to make them and enjoy!
