sooooo this morning i made soondubu shakshuka and it came out great! i love korean food and have been trying to improve my relationship with eggs so this seemed like an easy yes.
i have a huge love for mushrooms and definitely don't cook with them often enough so for dinner i'm thinking about this creamy garlic mushroom sauce with these gorgeous looking noodles.
up next is this tuscan tuna sandwich. i've been really intrigued by sandwiches lately, regardless of the fact that i should be cutting carbs :p i never knew the small details of what sets apart a great sandwich from an ok sandwich but this video set me straight and made me think differently.
moving on i think i'm gonna do a mixture of these two recipes. i like the usage of corn starch to thicken the sauce and the addition of red bell peppers. will probably use one of the solo ramen noodle packs in the pantry that i haven't tried yet. and i'm going to use ground chicken instead of ground turkey, bit of a nod to my dear pad krapow gai ♡
this gorgeous compound butter absolutely took me by surprise and i will be spreading it on sourdough in the morning or a busy afternoon when i need a quick bite. maddy also has this cucumber recipe with a spicy peanut sauce that will be a nice side dish for a dinner.
goals for next week?
i have wanted to make dakjuk for almost 2 years now and i might finally give it a go next week. it's so intimidating to think about cooking a whole chicken but the recipe seems simple enough. will also be nice to have this recipe mastered for whenever my housemates are feeling under the weather or just simply need a warm and comforting meal for the soul.
