Slow Cooker Garlic Parmesan Chicken and Potatoes + Rice

Hi, everyone!

Today's dinner was a home run! It was my second time making this and I feel like it came out even better this time. Maybe because I had a better understanding of the kitchen, lol. This simple meal was made in the Crock Pot, as the title suggests, and takes 7 - 8 hours to cook (low). So starting it early is recommended. By the time I was finished prepping everything, it was 10:30 am.

Ingredients:

8 bone-in skin-on chicken thighs

1/2 tsp dried basil

1/4 tsp dried rosemary

Kosher Salt/ Ground Pepper, to taste

2 tbsp unsalted butter

2 lbs baby red potatoes, quartered

2 tbsp olive oil

4 cloves, garlic, minced

1/2 tsp dried thyme

1 cup freshly grated parmesan

2 tbsp chopped parsley

long grain enriched rice, cooked separately in rice cooker


Ingredients

The first thing I do is defrost the chicken thighs for 10 minutes in the microwave. While the chicken is defrosting, I lined my Crock Pot with a slow cooker plastic cover. It makes it so much easier to clean up. I also got a head start on cutting my potatoes as well, to get those out of the way.

Then, once the chicken is defrosted, I then added the seasonings (basil, oregano, rosemary, salt, basil, and salt + pepper to taste).

Next, I get a large skillet pan out and melt the butter in it, over medium heat. Place the chicken and sear both sides until golden brown. This is around 2-3 minutes on both sides. Set the chicken aside, once the step is complete.

Place cut potatoes into the slow cooker while stirring in olive oil, garlic, and thyme. Plus add salt + pepper to taste. Then add your chicken into the slow cooker in an even layer above.

Cover and let it cook on the low setting for around 7 - 8 hours, or on high for 3 -4 hours. Mine took 7 hours and 10 minutes, on low.

In the last 20 minutes of your meal cooking, start your rice in a rice cooker. We made 3 cups of rice and added double the amount of water. 3 cups of rice = 6 cups of water. Wash your rice, then add it to the rice cooker + the number of cups of water. Let it cook while your meal is finishing cooking.

Lastly, after your meal is complete, serve it right away and top it with sprinkled Parmesan and garnish it with parsley, if you'd like.

We were so excited about eating I didn't get a picture of the meal on our plates. We enjoyed the chicken and potatoes over rice. I included a photo of the finished product in the slow cooker. I poured the rice in there just so it can be easy to access. I also attached a photo of the topping mixture. We just mixed the parmesan and parsley together in a bowl and used a small spoon to sprinkle it over our plates.

And that's it...pretty easy! If I can make it, so can y'all! This was so fun being able to document this while cooking. A little bit of a challenge but worth it! I hope you get to make it + enjoy it.
