They don't kmlw off the bat if you would like to be referred to as "she/her" or "he/him", or perhaps "they/them", or some of the newer pronouns folks are starting to use.
Asking which you prefer they use when speaking to or about you is a show of respect.
Although "they" is typically plural, it is sometimes used as a gender-neutral term when the gender of the person being spoken about is unknown. Usage in this way has been around since the 1300s at least, and was more common around the time of Shakespeare.
In the last decade or two, it has seen increased usage once again, not only in its original context but also for people who aren't particularly male or female.
