Have you ever tried making a vegan baked good of any kind? It is not easy without staples like eggs and animal fat. I was interested making something festive over the holidays and picked a Yule log. Typically they look like a big swiss roll made to look a bit like a tree log. They are tasty with little to no tree flavor.

I followed a mixture of two online recipes and my own intuition. I baked the cake portion in a flat sheet. Then, I rolled it, used a filling, and it originally looked like a traditional log. After an hour or so of sitting on the counter it all merged into one big cake thing. I was disappointed in the look of it, but it tasted alright and it was plant-based after all.

I did eat like half of it. It included lots of vegan butter, bitter chocolate chips, sugars, and time. I am sure a more experienced baker or professional plant-based person could do a better job. It is a delicious reminder that vegan foods don't need to mimic their non-vegan counterparts. They just have to taste good.
