Pumpkin bread

Absolutely one of my favorite things with a chai latte in the colder months. 




3 cups sugar 

1 cup oil 

4 eggs 

3 1\3 cups all purpose flour 

2 teaspoons baking soda 

1 1\2 teaspoons salt 

1 teaspoon ground cinnamon 

1 teaspoon ground nutmeg 

2\3 cup water 

1(15 ounce) can pumpkin 

 

Heat oven to 350 degrees. 

 

Grease bottom and sides of 2 load pans.  Set aside. 

 

In a large bowl,beat together sugar and oil.  Add eggs and beat well.  Set aside. 

 

In a separate large bowl, combine flour, baking soda, salt, cinnamon and nutmeg. 

 

Alternate adding flour mixture and water to sugar mixture.  Beat after each addition, just until combined.  Then beat in Cannes pumpkin. 

 

Spoon into prepared pans. 

 

Bake at 350 degrees for 50-55 minutes or until done,she a toothpick is inserted and comes out clean.  Cool bread in pans for 10 minutes.  Remove from pans. (I usually wrap the bread in tin foil,and put into the refrigerator over night).
