Hummingbird Cake

Ingredients 
  • 3 cups all purpose flour 
  • 2 cups sugar 
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 3 eggs, beaten 
  • 1 1/2 cup Crisco oil
  • 1 1/2 tsp. vanilla 
  • 1 8-ounce can crushed pineapple (undrained) 
  • 2 cups chopped pecans 
  • 2 cups mashed bananas 
Instructions 
  1. Mix all dry ingredients well
  2. Add eggs, oil, pineapple and bananas and mix well
  3. Bake in three 9 in. pans at 350 degrees Fahrenheit (175 Celsius) for 30 minutes 
Icing 
  • 2 8-ounce packages of cream cheese 
  • 1 cup margarine 
  • 2 boxes confections sugar 
  • 2 tsp. of  vanilla 
  1. Mix margarine and cream cheese until well blended 
  2. Add sifted sugar and vanilla 
  3. Beat mixture well
  4. Frost cake when completely cool
