Ingredients
- 3 cups all purpose flour
- 2 cups sugar
- 1 tsp. salt
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 3 eggs, beaten
- 1 1/2 cup Crisco oil
- 1 1/2 tsp. vanilla
- 1 8-ounce can crushed pineapple (undrained)
- 2 cups chopped pecans
- 2 cups mashed bananas
Instructions
- Mix all dry ingredients well
- Add eggs, oil, pineapple and bananas and mix well
- Bake in three 9 in. pans at 350 degrees Fahrenheit (175 Celsius) for 30 minutes
Icing
- 2 8-ounce packages of cream cheese
- 1 cup margarine
- 2 boxes confections sugar
- 2 tsp. of vanilla
- Mix margarine and cream cheese until well blended
- Add sifted sugar and vanilla
- Beat mixture well
- Frost cake when completely cool
