Google always seems to forget that Android is open-source.
I've actually been planning to make changes to my phone for a pretty long time. I want to install a custom ROM and completely de-Google my phone when I get a data transfer cable.
I actually tried de-Googling my phone while on a stock ROM and it's a pretty shitty experience because I didn't have stuff like MicroG for backing up notifications, for example (I use MicroG on stock only for modified YouTube), and MicroG isn't that great on stock because... well, MicroG spoofs code signatures which is pretty restricted on stock ROMs, so a custom version of Android will do its job.
Currently I have GMS installed, except I use Aurora Store, and like I mentioned, YouTube Morphe.
Why do I hate Google?
I don't want to completely avoid Google, after all I use YouTube to watch videos, upload my music (check that out later!) and discover new or old and forgotten music, but for the past 2 years I've been learning about the pure bullshit Google has done for years and most users don't even talk about it. I'll give you an example.
Play Integrity, formerly known as SafetyNet, which is a clear example of Google trying to impose what you can and can't do with your own device. You can't even use stuff like banking apps or Netflix with an unlocked bootloader for example.

I won't even give an explanation. It's clear how they don't want the user to do whatever they please with THEIR OWN DEVICES.
And it's happening again.
In case you don't know, Google announced back around the end of 2025 that they would be launching developer verification, in specific countries like Brazil in September 2026, worldwide in 2027.
It's going to force developers to basically dox themselves to Google even if they don't want to release their app on the Play Store. You know what's worse? Any phone with Google Play Services installed (most of the Android devices in the entire world, aka "certified Android devices") won't be able to run any app made by an "unverified developer". This means, even if you want to make an app for your friends for example, if your friends aren't level-infinity insane tech nerds and mad scientists of the digital era like me, they won't be able to install your app if you don't dox yourself and pay Google.
The safe solution.
You don't need custom stuff for this, just a USB data cable, your phone's drivers and to enable developer options & USB debugging. ADB is the solution.
The risky solutions.
If you are willing to take the risk, install a custom ROM and de-Google your shit. If you have a Pixel, install Graphene. If you have another brand, install Lineage or other ROM of your choice. (/e/OS, etc.)
Dude, it's called a "risky solution" for a reason.
Beware the risk. If you take a step wrong, you can brick your phone. Look at tutorials on XDA Forums.

To be honest, I feel you. I've felt stuck in the same ecosystem, no matter which manufacter is. Samsung, Xiaomi, Relame, OnePlus, whatever. I also tried to de-google, but man, I'm too lad for it. So as an alternative, I just went to HUAWEI Store and bought one (nova 13 Pro since their flagship product ran out of stock in my place). Still, just like you, I need YouTube to watch my favourite YouTubers so I had no choice to use it through web.
I guess I can say my journey with HUAWEI has been going pretty well. No problems whatsoever. I've been thinking to buy their laptops, too, as I've got their phone amd smartwatch. (^_^)
I'm also a fan of Huawei and Chinese technology (no guys i'm not from the ccp /j) and I plan on getting a phone that runs on HarmonyOS

Yeah, HarmonyOS. That OS is sure good. I still haven't gotten HarmonyOS yet. Maybe soon, though... If I'm able to fly to China myself (^_^;)
