carrot bread:
2 eggs, 1/2 cup almond flour, 1 cup ap flour, 1/2 cup brown sugar, 1/4 cup granulated sugar, scant 1/2 tsp baking soda(3/8 tsp to be exact), 1/2 tsp baking powder, 1/4 cup melted butter, 1/4 cup oil, smol pinch of salt, about 1/2 tsp of cinnamon(tbh i just sprinkle it in till i'm satisfied w the amount of cinnamon), sploosh of vanilla, about 215 g of shredded carrot, chopped & toasted nuts (cashews or walnuts prefered)
mix sugars, eggs, vanilla, oil, and butter together. fold in shredded carrots. mix dry ingredients together, then fold wet & dry together until just combined. fold in nuts (if adding, the nuts are optional)
pour batter into loaf tin and bake at 350°F for about 50 minutes or until a toothpick inserted into it comes out clean/w a few crumbs
if you wanna, you can sub the melted butter for greek yogurt
