2 medium romaine lettuces
1/2 long wheat baguette
1 double chicken breast - up to 600g
2 tablespoons cooking oil or olive oil
50g finely grated Parmesan cheese
Caesar dressing ingredients

7 tablespoons good-quality mayonnaise - about 160g
1 level tablespoon spicy mustard - about 15g
1 large garlic clove - about 7g
2 tablespoons lemon juice
1 tablespoon Worcestershire sauce or 1 anchovy fillet
4 tablespoons finely grated Parmesan cheese - about 35g
Optional additions: a pinch of pepper and red wine vinegar
First, prepare the sauce. To make it, combine the following ingredients: 7 tablespoons of good-quality mayonnaise; 1 flat tablespoon of spicy mustard; 1 large garlic clove, pressed through a garlic press; 2 tablespoons of lemon juice or a tablespoon of lemon juice and a tablespoon of red wine vinegar; 1 tablespoon of Worcestershire sauce or 1 anchovy fillet; 4 tablespoons of finely grated Parmesan cheese.Trim two fillets (one whole chicken breast) of any cartilage and fibers. Cut the meat into large, similar-sized pieces (I used larger, oblong pieces). Sprinkle the pieces with a little pepper. Heat a medium-sized frying pan. Set the burner to a higher than medium heat. Add a tablespoon of frying oil or olive oil. Carefully place the fillet pieces in the hot oil. Sear the meat until golden brown, about three minutes per side. Cut the fried fillets into bite-sized pieces.Wipe the chicken pan clean with a paper towel or use a larger pan. Slice half a long baguette (it may be slightly stale), then cut it into smaller pieces or a small dice for the croutons, and place them in the pan. Set the heat to medium and toast the baguette slices until lightly browned. After a while, you can also drizzle with a tablespoon of olive oil. Stir the croutons frequently to ensure even browning. Prepare the croutons for the Caesar salad without any seasoning. They should be perfectly browned and crispy in under 7 minutes.Remove the leaves from two romaine lettuces. Rinse the leaves under cold water and shake them dry, then tear each leaf into smaller pieces between your hands. I usually only remove the thicker vein from the larger outer leaves. Place all the lettuce pieces in a large bowl. Pour in some of the Caesar dressing and mix everything together.
