Different perspectives in history/my confusions

I'm a high schooler in Türkiye and mostly we see about the old Turks (before the Ottoman Empire) then we see the full history of the Ottoman Empire and after that we see the Republic Era.

Though when I go on the net, I always see people degrading the ottoman empire or modern Türkiye.

I'm well aware we're not exactly in the best conditions right now, with our current politicians and president sadly. But whenever Turkish cuisine is mentioned they go:

'Oh you mean Armenian, Greek and Arab cuisine?'

It still confuses me to this day people who don't do their research absolutely think of Türkiye as an Islamic country.

I went to Italy and a girl asked me: Is the hijab mandatory? Mind you we were 8 girls, only 1 of us were wearing the hijab. (I'm not even Muslim, though in my ID it says I am, can't change it until I'm an adult.) 

I was absolutely shocked.

Are people really that uninterested? Hell we have lots of christians/Jews here. 

We have churches, we have Synagogues, we have mosques.

It just blows my mind how uneducated people are.
