Side note: creamy chicken noodle soup recipe

Sooo I know no one asked for this but since it is fall and all I figured I could post my chicken noodle recipe on here. I don't even really like typical chicken noodle but I make this for my family and then I dip some bread in the broth and it's pretty good if I do say so myself. So here it is! Hope you enjoy if you happen to make it! :))

I attempted to put what I think the amount of each ingredient would be but I always just eye everything so if you can do the same then I suggest you do! Also this is pretty good to freeze and warm up when you don't feel like making something. Would be good frozen for a couple of months and in the fridge it lasts about 4 days.


Creamy chicken noodle

TLDR version at the bottom!!!

Ingredients to make a hearty batch (4-5 good sized servings):

  • 2 chicken broths (about 8 cups total)
  • 1 vegetable broth (about 4 cups)
  • Eyeball seasonings (you don't need that much herbs de provence or you’ll have to fish that shit out later, if you don't have herbs de provence then italian seasoning or just some regular ol herbs’ll do)
  • Like 4-5 full size celery sticks depends on how much you want
  • About 6 various large sized carrots
  • Heavy whipping cream (a splash, don't need that much lowkey) 
  • Some butter (I usually use about 2-4 tablespoons depending on the vibe) 
  • Shit ton of chicken, like majority of the bird and if a small chicken than the whole thing
  • Minced garlic (I guess about half a tablespoon)
  • Whole roast chicken drippings (optional but makes it taste a lot better)

Instructions: 

  • Cut the celery and carrots (circles for the carrots and cut the celery in half and do thin-ish slices, doesn't need to be too thin)
  • Get a big pot
  • Heat it to a medium heat
  • Put some butter in the pan and once it melts throw a good amount of garlic in there
  • Saute the cut veggies with some butter with the garlic and whatnot
  • After its pretty well browned then add the chicken
  • Season everything with salt and pepper
  • Mix that around for a little bit (let em get acquainted) 
  • Add all your broths (and drippings if you have em, and side note strain the drippings)
  • Add the seasonings (garlic and onion powder and a little bit of herbs de provence and some more salt and pepper like a good amount)
  • Cover with lid and let sit for around 3 hours (can sit for however long really probably tastes better the longer you leave it)
  • Oh also cook your noodles of choice and then add em to the plate and then put the soup on top
  • Before serving add a splash of heavy whipping cream, like right before no earlier
  • Tadah easy chicken noodle soup

TLDR: 

  • Cut celery and carrots
  • Heat up pan to medium heat
  • Throw butter and garlic in pan
  • Saute veggies until browned
  • Add chicken
  • Season with salt and pepper
  • Add broths and drippings if you have em
  • Add all your seasonings (salt, pepper, garlic powder, onion powder, herbs de provence/herbs in general)
  • Cover with lid and let sit on low heat for 3 hours
  • Cook noodles of choice in pot separately
  •  Before serving add splash of heavy whipping cream if you have it
  • Put noodles in bowl then soup on top and enjoy!
