Pumpkin Spice Opinions

It is currently autumn (the best season, duh!), which for the past decade and a bit has been heavily associated pumpkin spice (latte). At first, people would drink it at cafés, where the drink is sugar more than anything else, whereas these days a lot of people also just make the drink at home.

Last year, I followed a recipe I found online, using all the individual spices that make up the "pumpkin spice" and it tasted... HORRIBLY BITTER!!

Anyway, I recently received a "pumpkin spice latte" mix, where all you have to do is add boiling water and milk. And it still tasted bitter.

Is this just me??? Are other people just pretending to like their home-made pumpkin spice beverages??? How much sugar must I add for this to not end up bitter at some point?

I want to like it so bad but I feel like I should just use it for baking instead...

i currently work at a cafe and bakery, so i kind of have some insight on homemade pumpkin spice vs. cafe style pumpkin spice.

the real secret is that: however much the homemade recipe calls for in terms of sweetness or sugar, DOUBLE IT, TRIPLE IT, MAKE IT INTO A CONCENTRATE! almost to the point that it's sickeningly sweet by itself, so that any add-ons won't muddle down the pumpkin spice flavor.

i could be wrong, but that's how we do it at our cafe! good luck on your endeavors!!!
