Are those not the most beautiful desserts you've ever seen???
The ube crop itself is actually native to Southeast Asia, but ube-flavored food is starting to become popular all around the world, so you might have come across it in your area!
It has an earthy, buttery, coconut-y taste that is subtle...but the most striking thing about it is that gorgeous purple color, so much so that one of the Filipino terms for "purple" is "kulay-ube" ("ube-colored").
It's especially delicious as a bubble tea flavor, and it complements the taste of boba quite nicely!

You could get some ube-flavored desserts at Trader Joe's or your local Asian grocer. One ice cream brand I highly recommend is Magnolia (a Philippine brand, which makes it the real deal). You could also make these desserts yourself, but fresh ube may not be easily accessible in some areas of the world. A good alternative is dehydrated ube powder; or some grocers may sell "ube halaya," or an ube jam mix.
