cooking with GOAT: chicken chasseur

this is my own take on a traditional pub meal (hunter's chicken) which borrows heavily from the classic french poulet chasseur (which ofc translates to hunter's chicken). the name comes from way back when, when french hunter gatherers came back home with their rabbit or whatever, foraging for mushrooms and herbs along the way. it's a very simple meal, tasty as all heck and i'm going to show you how it's done!!

(for vegetarians, the meat can easily be substituted for mixed veg, quorn, whatever.  same for vegans - just leave out the cheese or use a dairy free alternative)

the bbq sauce

  • 4 tbsp tomato puree
  • 2 tsp mustard
  • 2 tbsp brown sugar
  • 2 tbsp syrup (or honey)
  • 4 tbsp soy sauce
  • 3 tbsp red wine vinegar

get these ingredients, slap them in a saucepan, stirring gently for about five mins or so on medium heat. once all the ingredients start gently bubbling away, turn off the heat and put the pan aside. there u go - you just made yourself some lovely tangy bbq sauce! :3

(also this stuff can be made in advance, and will keep about 2-3 weeks in the fridge!!)

the chicken && the rest of it

  • 4 large chicken cutlets
  • 200g button mushrooms
  • 2 garlic cloves, minced
  • 2 tbsp red wine vinegar
  • 75g flour
  • 2 tbsp butter
  • salt & pepper
  • CHEESE (i used herefordshire hop, but any cheddar will do)
  • bacon (tho i didn't have any ;__;)

first, take a small bowl and add the flour, a pinch of salt n pepper and mix well (you can also add in some other seasonin like cayenne or paprika if u want). take the chicken and pat dry, before dredging it in the flour.  then in a large skillet, melt half of the butter, then cook the chicken, searing well on both sides. drain n set aside.

in the same pan, add the other half of the butter, the red wine vinegar and gently deglaze the pan, adding in the garlic and mushrooms. cook until the mushrooms are a golden brown then remove from the pan. add all that to an ovenproof dish with the chicken and bbq sauce, stirring to coat as much of it as possible!

preheat ur oven to 200°C/392°F, then after five mins or so, put the dish in, leaving it to cook for at least twenty mins. at this point, you can take out the dish, give it another good stir before adding in your grated cheese (btw mozzarella is amazing with this stuff...i just didnt have any lol), cooking for another ten mins.

then you sit down and enjoy tf outta it
