im not talking about rice crackers with a slice of cheese and black pepper in the microwave. im out of that mess now xD
imagine this, you have nothing to do today so for dinner you want to make something delicious to eat while watching something on screen. (or more realistically eat it in 5 minutes and THEN watch it but i'd digress lol)
for me it is mabodofu. but recently at a chinese inspired restaurant i saw something amazing that was so delicious. it is a blend between tenshinhan and mabodofu with a piece of karaage on top!
its just rice in a deep dish, covered by a thin omelette and then covered in mapo sauce and topped with a single piece of karaage (fried chicken). it was absolutely amazing. and very easy to make as well!
the sauce is just as normal but without the tofu. you add minced meat (either beef or pork is fine but the latter is preferred) to a pan with sesame oil, cook until grey/lightly brownish while breaking up the mince. then add chopped garlic and ginger, stir that with a bit lowered heat, then scrape it to the side and add doubanjiang (based on how spicy u want it) and tianmianjiang (u can replace it with miso and sugar) on the pan and then mix it all together. use a little sake / white wine to glaze the pan, stir, then add chicken stock, soy sauce, more sake/wine, optionally layu for added heat and then increase the heat a bit while stirring. add chopped garlic chives (those green things, spring onions are fine to if u put the white parts with the garlic/ginger and the green parts here), add a mix of water and potato starch, lower the heat and viola, extremely savory mapo sauce.
you genuinely dont even need to put seasoning on the omelette, though u can sneak in taste neutral vegetables such as peas into the rice for extra nutrition. its just a cone of rice, a sheet of omelette over it and then you pour over the sauce. and optionally a karaage on top as a little extra snack. you eat it with a spoon and try to get egg, rice and the sauce together in one bite. this is addicting!!!

my usual comfort meal is just anything i can toss in the air fryer
chicken nuggets n fries or tater tots for example
tho when we have em, another quick n easy one for me is frozen potstickers and egg rolls
i like to toss a couple egg rolls in the air fryer and cook the potstickers over the stove
and if i got any spare time in the process of either i like to experiment with making different sauces to dip them in
