Meal Prep

QUINOA CAPRESE MASON JAR SALAD

4 Jars.
Ingredients:
1 pint container of cherry tomatoes
1 cup cooked quinoa I used tri color quinoa 
1.5 cups cocktail bocconcini cheese
basil from outside.
¼ cup finely diced purple onion
4 Tablespoons balsamic vinegar
4 Tablespoons olive oil

Mediterranean Vegan Meal Prep Bowls

4 Tupperware bowls. 
Ingredients: 
3/4 cup uncooked quinoa
1 (19 fluid ounce) can chickpeas drained 
2 Persian (mini) cucumbers (or use 1/3 English cucumber) sliced
Handful little tomatoes halved
2 tablespoons red onions chopped
Kalamata olives to taste
Hummus to taste (1-2 tbsp/bowl)

Sweet Yogurt Cups

4 Jars
Ingredients:
2 cups frozen pitted SWEET Cherries or any fruit or choice. 
½ cups water
2 TBS chia Seeds
1 TBS Honey
2 cups yogurt

Veggie Loaded Asian Noodle Jar Salad

4 Jars
Ingredients:
½ cup cooked fusilli noodles
1 cup broccoli 
½ cup edamame beans
½ cup baby carrots
3 scallions or onions finely chopped
3 any peppers sliced

Fusilli Mason Jar Salad

4 Jars
Ingredients:
3 cup Cooked fusilli noodles
½ cup baby carrots
3 any peppers sliced
2 cup Cucumber slices
1 cup Diced red onion
Italian vinaigrette dressing 

The Bolded and the Italicized words are one's that I can repeat the ingredient for other dishes and sub one thing for another.
