Which local LLM model should I use?

The title is pretty self-explanatory, for context I am using Ollama to run my models locally on Windows as online models like DeepSeek/ChatGpt love to censor information, is there any model within range of 5b-12b that has great detail and length to write? Also if yes then what are the specs? Would be helpful to know
