Summertime vegan food inspiration

Summertime for northern hemisphere :) Trying to get some food inspiration going! What do you guys like to eat in the summertime?  If it's not vegan - let's veganize it :)

Right now I'm having a fruit salad right now with sliced red and green apples with red grapes. I threw it together last night so the flavors would meld.  


I just added a generous amount of maple syrup (if you're cheap you could vegan sugar; yes sadly not all sugar is vegan, but I promise not to go on that rant today), a teensy bit of vanilla extract and homemade lemon extract, and a very eensy teensy bit of cinnamon. Affordable, super delicious, and relatively healthy.

You could obviously add other fruit, throw some chia seeds on top, or add other extracts or spices if you like. If you don't like maple syrup you could use molasses or sorghum (sorghum tastes about halfway between molasses and syrup, I think). 


Or you could make it fancy (and a bit pricier) and use brown rice syrup or coconut syrup. You probably could even skip the syrup and use applejuice concentrate, but in this case I think it would be too much apple LOL.


I've also made cherry popsicles :)  And trying to eat lots of salads! I made some black-bean salad the other day and it turned out so well I wished I could eat it every day for the rest of my life LOL.

By the way, I asked on my blog about ditching dairy and since you're talking about vegan foods, I wondered if you'd know how to answer... :>
I swear it's not promoting or anything lol, I'm just curious.

As far as ditching dairy, personally I did it gradually. I was a vegetarian for a few years before I finally decided to cut the crap and just stop consuming it. I wasn't eating it very often anyway, mostly just cheese on pizza or maybe pasta alfredo. I had already completely switched to plant based milks.

Personally for me I don't miss cheese but I know some people do. If you're having something mediterranean, instead of salty feta you can just add more delicious olives which will give some of the same briny flavor. For something mexican you can add extra guacamole or just plain avocado for creaminess. For creamy pasta, a little nutritional yeast and plant based milk can go a long way and of course you can make something extraordinary by also adding some spices (smoked paprika is a good one) and maybe a teensy bit of prepared mustard (for color and flavor). Speaking of vegan pasta, actually sometimes I will make avocado pasta with lots of garlic; that is richer than cheese in my opinion and avoids being so greasy as well.

Also, nuts and seeds add some healthy plant-fats to make food richer and to be honest I think they taste better than dairy anyway. They are sometimes expensive though lol.

I have heard that eastern europeans tend to enjoy sour cream. I never ate it very often so I have not bothered to find substitutes, but I am sure there are probably easy vegan substitutes; something with cashew cream might work.

And I think one of the easiest ways to ditch something harmful is just continuing to read about the harm and being conscious of it. So many people are not aware of the harms in meat, especially factory farming, and they are too afraid to learn. Also many people see farmed animals as stupid; when I was young I thought cows were stupid dirty animals but I like them a lot now and feel completely differently. Of course you don't have to like all animals lol but for me it helps to respect the living thing, I think.

I'll definitely try to look for those ingredients at a store to see what they got. Especially the avocado, I haven't eaten it in years, so I might want to return to it. Recently I found out that there's an ecological store nearby which has dairy products, so maybe I'll go there every once in a while before I stop completely. I don't want to have any adverse effects just in case.

Also, this one's for you, have you heard of fried tomatoes with teriyaki sauce? It's a little harder to make, because it uses whole tomatoes and these have to be either special breed, the hard ones, or need to be cooked by a skilled person because tomatoes have a nasty habit of falling apart when heated. But a friend made it once for me and it was super good, it felt kind of like a small soup.

I like to make myself oat milk shakes and smoothies. My favourite is banana and peanut butter. If I decide to skip out the milk in general, I just add another banana to it.

Another thing I like is buying some lemon or orange sherbet because I don't tryst myself THAT much in the kitchen (I'm not sure if that's what you call it in English? Basically it's like ice cream, but it's made with fruit juice and water unlike normal ice cream)

Also, this one is pretty stupid, but I like to eat chocolate sprinkles out of the packet. Despite being sweet chocolate, there's no milk in it, lmao.

I am not sure about the word you are thinking of in English though. Actually in English "sherbet" typicaly has a small amount of dairy milk so I don't consume sherbet anymore. Sorry I don't speak Polish!
