fall/winter recipes

i thought, in light of it being the holiday season, i might share some of my favorite fall/winter recipes. let me know if you make any of them!



1. roast chicken & root vegetables

this one is incredibly simple, and a good way to learn some tasty but easy cooking! i usually just eyeball these amounts, so adjust to your family size. as is, it feeds about 4-5 people.
1 whole chicken
1 onion, outer 1-2 layers removed
2-3 whole carrots, peeled or unpeeled
1-2 parsnips, peeled 
2-3 potatoes, peeled or unpeeled
1 sweet potato, peeled
spices for chicken: 
1tbl thyme
1tbl salt
1tbl dill weed
1tbl sage
1tsp tarragon
1tsp garlic powder

(feel free to play around with the herbs here. if you particularly like something add more of it. or even add your own favs like cumin, or paprika, etc.)

preheat oven to 350.
cut all of the veggies into rough 2-3 inch pieces, or roughly the size of a small egg. keep everything roughly the same size. don't worry about it looking perfect. 
place them into a large rectangular baking dish with a bit of oil, salt, and pepper. 
place your chicken on top of the veggies. 
mix your spices in a bowl, and sprinkle all over the chicken. rub them into all the bits and crevices! 
bake in a 350 degree oven, for about an hour, or until thermometer reads 165. 

if you dont have one, get yourself a meat thermometer.


2. mrs. bean’s famous nutmeg ginger apple snaps, from wes anderson's fantastic mr. fox

now this recipe is courtesy of fox searchlight pictures, and mario batali. some of you may know that he is currently standing trial for some #metoo type sexual misconduct. basically he's a piece of shit. however, don't let that distract you from mrs. beans famous nutmeg ginger apple snaps. they're very good. you can of course use any other recipe for these, since there's a ton online, if you really don't want the batali recipe. it is the official fox searchlight recipe though. but, like i said, use any recipe you can find for these, because they're tasty as fuck.

1 1/2 cups unsalted butter
2cup light brown sugar
1/2 cup molasses
2 eggs
3 1/2cup unbleached all-purpose flour
2tsp ground ginger
1tsp ground nutmeg
2tsp cinnamon
4tsp baking soda
1tsp salt
pinch of ground clove
3tbl fresh ginger, grated
1/2cup candied ginger, finely chopped
1 ½cup dried apple rings, coarsely chopped 

preheat oven to 350 degrees. cream butter and brown sugar until fluffy. add molasses and eggs and mix well. in a separate bowl, combine flour, ground ginger, nutmeg, cinnamon, baking soda, clove and salt. mix well with fork and add to butter mixture. blend in fresh, candied ginger and dried apple pieces. drop by teaspoonful onto parchment covered baking sheet, about 2 inches apart. place one whole apple ring in the center of each teaspoon. bake about 10 minutes, or until lightly golden. cool.


3. thanksgiving pizza

a good way to use up your thanksgiving leftovers. also very easy to make if you have a premade pizza crust. this shits so good, but you only really have one week a year to make it. it might be past that time for most of you. these amounts are guesstimates, since i've never measured it out lol

1 pizza crust
1cup roughly of turkey gravy
1-2cup of low moisture mozzarella cheese
1cup of turkey meat
1/2cup of turkey bread stuffing
1/2cup of cranberry sauce, liquid enough to drizzle over the pizza 

preheat oven to 350
get your crust and spoon some turkey gravy over it.
top with cheese.
add all other toppings sparingly. (too many toppings can make your pizza cook wrong)
drizzle cranberry sauce over the pie in thin lines.
bake until cheese starts to brown.

4. bierocks 

bierocks are good, especially if you make a bunch and freeze them. essentially they're home made hot pockets, so just pull one out of the freezer and microwave it. though, they're best fresh out of the oven, so eat some hot too!
