This is sort of off brand for my blog, but I feel that I may have perfected the art of cookie making so here ya go! Just a warning i do sort eyeball a lot of measurements because I couldn't be bothered, if I say "about" this much ingredient just measure with your heart
Ingredients:
Cookie dough
- 1.5 cups of flour
- about a teaspoon of baking soda
- about a teaspoon of salt
- a dash of cinnamon
- 2/3 cup (two sticks) of butter
- about 1/2 cup brown sugar (I usually add a bit more)
- about 1/2 cup white sugar (I usually add a bit less)
- a splash of vanilla extract
- 1 egg
- whatever cookie toppings you want (my personal faves are dark chocolate chips, chopped up peanuts, and toffee)
Toffee- I personally think the toffee is necessary to make great cookies, and it conveniently gets rid of the extra butter you will have. But you dont have to make it if you dont want to.
- 1/3 cup butter
- 2/3 cup brown sugar
- 1/2 teaspoon salt
Directions:
I like to make the toffee first so that it can cool in the fridge while I make the rest of the cookies
- In a skillet with the stove on low-medium heat and add the butter and brown sugar and continuously stir
- Once the butter is melted add the salt and continue to stir then SLOWLY turn up the heat until the mixture begins to bubble
- Keep stirring, the mixture should start to become sort of fluffy/goopy from the bubbles and the butter will stop separating from the sugar
- Once it is completely fluffy, or reaches 300 degrees Fahrenheit, pour the toffee onto some parchment paper or aluminum foil and put it in the fridge to cool
DO NOT WORRY if you don't have a cooking thermometer I don't have one either just watch a video of someone making toffee to see what it looks like when done cooking or something you'll figure it out. Even if your toffee is a little fucked up/undercooked it will still taste delish trust me its going to get broken up into chunks and cooked again in the oven anyway it doesn't have to look nice right now!!
Cookie dough time!!
- In a bowl add flour, baking soda, salt, and cinnamon. Stir until combined
- In a SEPERATE bowl add melted butter (or browned butter if you're feeling fancy), sugar, brown sugar, vanilla extract, and egg. Stir until combined
- add the dry ingredients to the wet ingredients and stir until combined
- add whatever toppings you want- if you made toffee it should be cooled enough by now to break up and add to the dough; dont worry if it is more stretchy than hard it will still taste good trust me
- I personally prefer to make the dough in advance and let it cool in the fridge for a few hours, but if you're feeling impatient the dough should be ready to bake now
- preheat the oven to 350 degrees Fahrenheit and bake for 10-12 minutes
- the cookies might look a bit undercooked and feel soft when fresh from the oven DO NOT KEEP COOKING they will harden once they cool. unless youre really scared of salmonella or like crunchy rather than chewy cookies or something, then do what you want
