whats the deal with cat petting

i will pet one of my cats and anywhere that isn't the head is DEATH ZONE and she will BITE ME INSTANTLY AND FREAK OUT

i have this one other cat however and i can pet him anywhere and he is so joyful and lovely, i don't know if the lovely one is too trusting or if death zone one hates me
