Cinnamon cookies recipe <33
ps. tested in an average kitchen :)
(makes around 24 cookies)
Ingrediënts:
Batter:
- 1 cup (226 g) softened unsalted butter
- 1 cup (200 g) granulated sugar
- 1 large egg + egg yolk
(pref. room temperature)
- 1 teaspoon vanilla extract
(recipe calls for 1/4 but i prefer a whole teaspoon :))
- 3 cups (375 g) all-purpose flour
- 1 1/2 teaspoons cream of tartar
(you can substitute this with 3 teaspoons of lemon juice or white vinegar)
- 1 teaspoon baking soda
- 1/2 teaspoon table salt
Ripple:
- 1/2 cup (100g) light brown sugar
- 1 tablespoon ground cinnamon
- 1/8 teaspoon table salt
- 1/4 cup (57 g) unsalted butter.
Instructions:
1. preheat your oven to 350 F (175 C)
2. in a large mixing bowl, cream your butter and sugar until combined
- 1 cup (226 g) butter + 1 cup (200g) sugar
3. Add the egg and egg yolk plus the vanilla extract into the mixture and mix until well combined.
- 1 large egg + egg yolk + 1 teaspoon vanilla extract
4. in a separate bowl whisk together the flour, cream of tartar, baking soda and salt
- 3 cups (375 g) all purpose flour + 1 1/2 teaspoons cream of tartar + 1 teaspoon baking soda
+ 1/2 teaspoon table salt
5. slowly add your dry ingredients into the butter mixture as you stir until completely combined.
6. to make the ripple grab a separate bowl and whisk together sugar, cinnamon and salt before adding butter and mixing until it resembles a paste.
- 1/2 cup (100g) light brown sugar + 1 tbsp cinnamon + 1/8 teaspoon salt + 1/4 cup (57g) unsalted butter
7. gently fold the ripple into the batter and make sure it doesnt fully mix.
8. line a baking sheet with parchment paper and form balls of the cookie dough on it
9. bake for around 10 minutes
10. let the cookies harden outside the oven by putting them aside for 10-20 minutes
