Ingredients:

Nuggets;

- 4 Boneless, Skinless Chicken Breast

- 3 Large Eggs

- 18g Kosher Salt

- 8g Garlic Powder

- 2g Black Pepper

- 1g Smoked Paprika


Wet Batter;

-188g All Purpose Flour

- 18g Kosher Salt

- 8g Garlic Powder

- 7g Onion Powder

- 2g Black Pepper

- 1 Egg

- 44.36ml Yellow Mustard

- 355.50ml Cold Carbonated Water

- Rapeseed Oil

Β Instructions;

1. Line Sheet With Parchment Paper

2. In A Food Processor, Combine The Chicken, Eggs, Salt, Garlic Powder, Black Pepper, And Paprika. Blend Until It Forms A Paste-Like Consistency.

3. Grease Your Hands With Oil To Prevent Sticking. Use Your Hands To Shape The Chicken Mixture Into Nugget Shapes And Place Onto Parchment Paper. Place Baking Sheet In Freezer For 30 Minutes Or Until Firm.

4. When Nuggets Are Firm, Fill A Deep Pot With 5-7cm Of Oil Over Medium Heat Until It Reaches 193c.Β 

5. In A Large Bowl, Whisk Together Flour, Salt, Garlic Powder, Onion Powder, Black Pepper. Whisk In The Egg And Yellow Mustard, Then Slowly Whisk In The Carbonated Water, And Whisk Until Completely Combined. Batter Should Be Runny.

6. In Batches, Dip The Nuggets Into The Batter, And Then Add To The Oil- Leave Enough Room So The Nuggets Don't Touch. Let Them Cook Until They Are Golden Brown. Transfer To Wire Rack And Continue With Other Nuggets.

7. Let Cool And Then Serve.Β
