(Depends on the country you live in, phones have access to 2G/3G/4G band coverages. The oldest phones are all 2G, then 3G and 4G got introduced. Some countries have discontinued 2G and/or 3G coverage (such as mine; here we only have 2G and 4G), which might cross out some (possibly vintage) products.
Now, with all this background info, gsmarena[dot]com is your friend. You can read about a country's coverage (in *specific* GSM band numbers; it's not scripture though, google authentic news sites about potential discontinuations mentioned above). AND THE COOLEST PART IS THE PHONE FINDER. You can filter by year, manufacturer and FORM FACTOR (you've specifically said flip phones), and read detailed reviews about some of them.
Protip check out the charger type they have. Vintage ones used to have their own type, and there's also microusb which I hate but whatever. This is important for file-transfer data cables as well.
From here, you can figure out if you want to have it new or from the second-hand market. Watching Youtube videos about the model can be useful too.)
