i was making ramen last fall and came up with this on accident. it's now my default noodle-making method! this recipe is perfect if you like your instant noodles broth-less, like i do. this is just a base recipe, too. you can add on your preferred ramen fixins if you like. i personally recommend sauteed tofu and green onions.
>any instant ramen noodle packet (my go-tos: top ramen soy sauce flavor + maruchan chicken flavor)>2 tbsp soy sauce>1/8 tsp sesame oil>2 tsp msg/umami powder (i use trader joe's mushroom & co umami powder)
directions:
- boil ramen noodles over stove in small saucepan until just cooked. turn off burner. drain, but leave about 1/3 cup of water in the pan.
- return pan to still-warm burner. add umami powder and about half of the flavor packet to the noodles. stir well.
- keep stirring and add sesame oil and soy sauce. stir and keep on warm burner until noodles are tender and sauce is thick enough to coat the back of a spoon.
- plate, serve, enjoy!
im thinking about workshopping this a little more in my free time. i'm wondering how it would work out if added to a homemade vegetable broth for cold days or sick days.
