baking #2 // red velvet cookies

hi! I found recipe for those cute red velvet cookies with mascarpone and altered it a little so I wanted to share it:

ingredients:

soft butter~ 125g

sugar~ 220g

egg

wheat flour~ 300g

baking powder~ 1 teaspoon

baking soda~ 1/2 teaspoon

cocoa powder~ 1 tablespoon

white chocolate~ 100g

mascarpone~ 200g

freeze-dried raspberries~ 20g

red food dye (powdered)

pinch of salt

UPDATE!:  don't add fresh nor frozen raspberries, tried it twice and the dough changes consistency making the cookies too soft


Beat soft butter with sugar (I use planetary mixer but you can do it with spoon as well). Add whole egg and food dye, mix well. Add all of dry ingredients and also stir till they combine with butter, crush the freeze-dried raspberries into the dough, then you can add chopped chocolate. Divide the dough into 8 pieces (100g each). You have to form them into little bowls, put mascarpone inside and form a ball. You can measure mascarpone before (8 balls/ 25g) and freeze them, so they will be easier to put inside. Before baking, put them in fridge for 3hrs (I'm sure freezer will work well too, for like 30 mins). Bake them in 180*C (up-down mode) for 12-15 mins, white chocolate burns easly btw.

Also bake 4 cookies at once, because they get a lot bigger
