this is my fav fav favorite soup!! it's a creamy and savory meal perfect for cold weather (or anytime imo :3)
it is also slightly customizable to different diets! its general ingredients are potatoes, kale, pork, chicken broth, and cream but you can always switch out the meat or broth type if you don't eat certain kinds meat. and as always you could switch out ingredients for vegan or dairy-free options too.

this recipe makes a huge batch because i usually make it for a group or just eat the leftovers for days until its gone lol
if you want to make the batch i make you'll need a really really big pot (i use a 6.5 qt dutch oven)
i've stopped measuring how much of each seasoning i put in, i think it's about 1/2 to 1 teaspoon red pepper, 2-3 teaspoons of salt, black pepper, and tony chachere's.

⋆。°✩ ─ 2 tablespoons butter
⋆。°✩ ─ 1/2 medium yellow onion, diced
⋆。°✩ ─ 1 tablespoon minced garlic
⋆。°✩ ─ 4-5 russet potatoes, thinly sliced (like 1/4 inch thick
⋆。°✩ ─ 1 pound spicy ground pork
⋆。°✩ ─ 6 cups chicken broth
⋆。°✩ ─ 2 cups water
⋆。°✩ ─ 2 cups heavy cream
⋆。°✩ ─ 1/2 pound chopped kale (not exact, my grocers only sell 1 lb bags and i always put in at least half)

⋆。°✩ ─ crushed black pepper
⋆。°✩ ─ red pepper flakes
⋆。°✩ ─ tony chachere's (a cajun seasoning blend for those not familiar, blend of salt, red pepper, black pepper, chili powder, and garlic powder. i unfortunately don't know the actual ratios so i recommend trying to find smth similar!)

⋆。°✩ ─ Add butter and diced onion into pot and sauté on medium heat until fragrant. Add garlic and repeat.
⋆。°✩ ─ Add ground pork into pot, sauté and chop into smaller pieces with spatula until browned.
⋆。°✩ ─ Add chicken broth, water, and potatoes. Bring to a boil and allow it to boil for about 15 minutes or until potatoes are tender. (potatoes should break easily when you push your ladle against them)
⋆。°✩ ─ stir in heavy cream and kale.
⋆。°✩ ─ season with my measurements (see extra info note) or to your taste.
