healthyish breakfast recipe ♡

This is a recipe for my favorite breakfast. I say favorite, but i’ve only made it once. It must’ve been pretty good then, if it was able to convince me after one try. I've been trying to cook more since I've turned 18 and eggs are probably one of my favorite ingredients to work with. A shame they're so expensive these days though... Ah. 

Obviously this won’t work for everyone’s dietary needs, so feel free to fix it to your liking. It’s not a very complicated recipe.

What you need

-One egg

-Some baby spinach

-One mini bagel (plain and halved sandwich style. maybe even try whole grain ones if you can find those for even more healthy points)

-Shredded cheese (maybe cheddar but anything you have one hand probably works. If your cheese isn’t pre-shredded you’ll want to shred some and set it aside before cooking. Just a little bit.)

-Butter

-Salt and pepper

-Crushed red pepper flakes


First you wanna put your mini bagel in a toaster or toaster oven and let it toast in there. Grab a non-stick pan, set the heat to low or medium, and put a little bit of butter in there. Usually I just use enough to coat the bottom of the pan, but feel free to use more. You may have to tilt the pan around a bit to get an even coat.

Then you’ll want to put your baby spinach in there, just about a handful, and let it cook slowly, maybe move it around a little bit with a little rubber spatula. In another bowl you crack the egg, then add salt, pepper, and crushed red pepper flakes to taste. But maybe don’t try to taste the raw egg… Imagine the flavor ratio in your mind’s tongue. Season to your mind’s tongue’s taste. Note that if you’re using salted butter you may want to add less salt than if you were using unsalted. Whisk the egg up with a fork and then pour it into the pan with the spinach.
Once it’s in there you’ll want to keep moving the egg with the spatula, almost in a scooping motion? If you know how to make scrambled eggs, this is just scrambled eggs. Scramble ‘em.
And then once the eggs are almost done and only just a bit runny, add the little bit of shredded cheese and fold it into the scrambled eggs so it gets all nice and melty. Make sure they’re cooked nicely, then pull out the toasted mini bagel from before and put it on a plate. Carefully pour(?) the scrambled cheesy spinach egg on to your bottom bagel, then put the other half on top to make yourself a little bagel sandwich.

If you need more calories than that, you can always make another. I’d like to serve it with some yummy fresh fruit or berries, maybe even more vegetables.
