I made a delicious soda bread the other day and wanted to share the recipe.
1 and 3/4 cups buttermilk
4 and 1/4 cups flour - I did 2.5 cups of all-purpose and 1.75 cups of whole wheat
3 tablespoons of sugar
1 teaspoon baking soda
1 teaspoon salt
5 Tablespoons salted butter (you could probably use unsalted but I had salted on hand)
1. Preheat your oven to 400°F.
2. Put the dry ingredients (flour, sugar, baking soda, and salt) into a bowl and mix them together.
3. Cut the cold butter into cubes and add it to the dry ingredients. I used a pastry cutter to start mixing, then used my fingers to smash the larger bits into pea-sized pieces. You can do the same—just don’t overwork the butter!
4. Add in the buttermilk and mix gently. The dough won’t fully come together and will look like it needs more liquid, but don’t worry—that’s how it’s supposed to be.
5. Sprinkle a little flour on your hands and a clean cutting board. Take the dough out of the bowl and knead it just a few times to bring it together into a rough ball. Don’t overdo it!
6. Line a 7–9 inch baking pan with parchment paper. I used a metal pie tin, and it worked great! Place your dough ball on the parchment and use a knife to cut an “X” in the top, no deeper than an inch.
7. Bake for 45 minutes, then check the internal temperature with a thermometer. If it’s 195°F or higher, it’s done. Take it out and use the parchment paper to lift the bread onto a cooling rack. Let it cool before serving.
