makes 6 rolls.
takes about 1-1.5 hours and ~$20USD.
preheat oven to 350F/180C. (If using cast iron, preheat it in the oven too. I recommend it cos the bottoms of the rolls are almost fried in a way, very tasty)
FOR THE DOUGH:
- 312g all purpose flour (plus more if it's too sticky to work with)
- 2tbsp baking powder
- 1tsp salt
- 115g cold butter, cubed
- 270ml cold buttermilk (or 260ml whole milk and 10ml white vinegar or lemon juice)
- whisk together dry ingredients. add butter and cut into dry ingredients with a biscuit mixer, food processor, or by pinching big pieces, until coarse crumbs form.
- make a well in the center and pour buttermilk in. stir until just combined, it will be very shaggy.
- turn out onto lightly floured counter and mold into a rough rectangle. fold in thirds, turn horizontally, and flatten. repeat twice more, spreading out to 1/4in thickness the last time-- ~24x15".
FOR THE FILLING:
- 1c packed dark brown sugar
- 2tbsp cinnamon
- 0.5c melted butter, cooled
- 1tsp salt
- mix together and spread over the dough, leaving a ~0.5in border along the edges.
FOR THE ICING: (make while baking)
- 2oz cream cheese, room temp
- 7tbsp butter, room temp
- 1/2tsp vanilla extract
- 2tbsp milk
- ~1-1.5c powdered sugar
- .75tsp salt
- beat cream cheese and butter until creamy. add vanilla, salt, and milk, then gradually mix in sugar until your desired consistency is reached-- some like it thinner, others thicker. just add more sugar until it looks good.
ASSEMBLY:
- roll up flattened and cinnamon-ed dough as tightly as possible long-ways, taking care not to let the dough crack. cut off the very ends of the roll to get straight ends, then cut into slices ~2.5" thick-- you should get about 6. arrange in a cast iron skillet or lightly greased baking pan and bake in preheated oven 25-30 minutes, until risen and golden brown.
- after they are done baking, let rest ~2 minutes before icing. rest another 5 minutes on a wire rack before serving-- if using a cast iron pan, it will still be very hot.
