I love cooking and I got this great recipe from my uncle recently (after he made it last time he visited... miss you man come back soon!!!) It's relatively cheap to remake once you have all the spices (and you can freeze green onion and parsley-- I learned that recently....idk if you should tho.)
You can make a passable version with dried spices but TRUST ME use fresh stuff. So good.
1 can of blue runner red beans-- the creole style ones? yeah super super important.
1 can progresso kidney beans (or just any brand of kidney beans)
1/2 white onion- course chop
1/2 bunch parsley- medium chop
1/2 shallot - course chop (can be substituted with a 1/4 of an onion)
3 green onions (separate green stems from white while chopping)
6 cloves of garlic- course to medium chop
1 large bay leaf
3/4th tsp poultry seasoning
1 1/2 to 2 cups of rice ( i use brown cuz it keeps me fuller longer but any works! remember to wash it before hand til water's clear!!!!!!!!!!!!!!)
STEPS TO COOKING
step 0: Cook rice!! or at least have it simmering before you begin
1. On medium- medium high heat sautee onion, green onions (white part only) and shallots (or replacement onion) COOK til soft (about 3-5 minutes)
2. add garlic, cook for 3-4 minutes
3. add chopped greens (parsley... i think the other part of green onion) until softened
4. add beans PROGRESSO or KIDNEY BEANS FIRST then blue runner (prevents burning)
5. add bay leaf (break in half) and poultry seasoning
6. Simmer on med-low for 10 minutes or more (up to 30) stirring often
7. Serve over cooked rice
