ahh Brasilena, the soft drink made in Calabria (Italy) par excellence, a slightly fizzy coffee soda with a very light caramel aftertaste. perfect to enjoy cold on summer days (but only in Calabria). Yes because this drink is sold only in Calabria region, so I (from Salento, Italy) and the rest of the world, cannot try this drink like true "terroni" (italian southerners). So if you want to try it either go to Calabria (as I did) or prepare it at home. I created this recipe in my Salento version, based on the most famous coffee made in Salento, iced coffee and almond milk, (Caffè Leccese for tourists (Lecce is the "capital" of Salento))

Brasilena Salento Touch - Recipe
Ingredients
- 300ml of sparkling mineral water (beddha fridda)(nice cold)
- 100ml of espresso coffee (very concentrated, prepared with about 3-4 coffees)
- 60g of sugar
- 25ml or 50ml of almond milk (depends on how much you want it sweet and with a creamy back texture)
- 1 teaspoon of liquid caramel (to have color, sweetness and aftertaste)
- Ice
Procedure
. before you start getting the ingredients you need some nice Salento reggae with this skin-warmer sun, so turn on the speaker, open Spotify and play w shuffle the "Sud Sound System" band
1. Preparation of the Concentrated Coffee:
- Prepare 100 ml of very concentrated espresso coffee and let it cool completely. If you use the Moka it's even better
2. Preparation of the sugar-caramel syrup:
- Dissolve the sugar with 50 ml of water in a small saucepan over low heat, stirring until completely dissolved.
- Add the liquid caramel to the sugar syrup and mix well.
- Let the syrup cool to room temperature.
3. Add Almond Milk:
- Once the syrup has cooled, add the almond milk to the syrup and stir until smooth.
- It is important that the almond milk is very cold to prevent it from separating when you mix it with the water.
4. Siruppu™ Composition: ("Siruppu" word created by me, is a fusion of Syrup/English and Sciruppu/Salentino Dialect. Siruppu is the final syrup with sugar, caramel, almond milk and coffee)
- In a bottle or carafe, mix together the concentrated coffee, the almond milk mix and syrup.
- Place the Siruppu™ in the fridge to cool it further
5. Serving:
- In a glass together with the Siruppu™ add ice if desired and stir to cool the Siruppu™ and glass
- Add the sparkling water and stir gently (but good) to avoid degassing the water
- Serve your coffee soda with almond milk very cold, with ice (if desired).
- P.S.
if you want to be fancy or aesthetic or whatever you fucking call it, you can serve the drink in a creative way:
Layered Create a layered effect by first pouring a layer of cold almond milk (or another liquid of your choice) into the glass and then, slowly, add the coffee soda.
Rim of Sugar and Ground Coffee Before pouring the drink, wet the rim of the glass with a little sugar syrup, then dip the rim in a mix of sugar and ground coffee (or cocoa powder if you like).

Brasilena Salento Touch - Martini Fizz Remix
. Ingredients:
- 150 ml Coffee Soda (homemade brasilena)
- 30 ml vodka
- 20 ml coffee liqueur (Kahlúa)
- Ice
- Coffee beans for garnish
.Preparation:
- Fill a shaker with ice.
- Add vodka and coffee liqueur
- Shake well and strain into a martini glass.
- Add coffee soda and stir gently.
- Garnish with coffee beans.
