Here are my fav breakfast foods, some quicker to make some take a bit more time! (btw im vegetarian)

Toasts/Sandwiches!!!! - Toasts are delicious and there is a huge variety of toppings. You can add a tomato and melt some cheese on it, you could do an avocado toast, put some scrambled eggs on it (believe me its yummy), tuna, salad, some Nutella with bananas, a lot of options, and you usually already have most of the toppings in your fridge

Make a smoothie! - if you have a mixer ofc, but you can make those not only a drink but a full breakfast, and you can make those the day before so you can have a quick breakfast if u need to. To make them more filling add oatmeal, but the other ingredients can be any fruits you like!

Pancakes - there are different types and can be made sweet or sour! There are crepes, souffles, typical pancakes. I love crepes as they aren't too sugary and you can still make them be sweet or sour depending on the toppings (https://www.delscookingtwist.com/easy-french-crepes/) here u have a good recipe :D

Scrambled eggs - those seem boring but add some onion, tomatoes, spices, greens, etc. and they will be really good!

French toast! - it's amazing, I don't have a recipe but try to find one that is made by someone from outside America (don't wanna hate on americans but I had bad experiences with their recipes being overly sugary or bland, and this goes to most non-american food recipes, be careful for the sugar, believe me it's not needed)

Oatmeal - I don't like oatmeal much but know many ppl enjoy it and you can add so many different ingredients, you could eat just oatmeal for a month and make it different every time

SO yeah! There are many good breakfast foods and overall recipes. I recommend scrolling thru pinterest and finding inspo (also depending if u like japanese cuisine, but they have so many good and healthy recipes, really recommend looking at those, here is a blog i really like https://www.justonecookbook.com/ )
