Hey everyone (i don't even know if someone will read this shit but whatever), I discovered a musical group a few weeks ago: Celtic Woman!!!! Man, i was studying and listening to music like always, and then an idea popped into my mind, "Why don't I listen to music with a medieval vibe?". So opened the spotify and searched some playlists that might sound like this, and then I found out the perfect playlist with the perfect song, Teir Abhaile Riu!
I was just so mesmerized by this song! How the hell did a melody as incredible as this exists and i had no idea?? I was so fascineted by this that i opened their perfil and started to listen all their popular musics, and i can say that they are all perfect. You all should listen to it someday, really, i mean it. You'll feel like you are in some those medieval fantasy books, with magic creatures, prophecies and sword duels!
Speaking in medieval fantasy books, there is one that i think is simply wonderful but has ZERO recognition: The Prophecy of the Gems. I got this book from my dad when i was nine and i already read it more than 5 times because the story is so good and the plot is amazing. A curious fact about this book is that it was written by a thirteen year old girl, the french Flavia Bujor, and i really admire her for that, like, i don't think i'll be ever able to do something so hard-working and creative, but who knows? Maybe one day i will.

the song "The Fool" by neutral milk hotel gives me medieval vibes idk if its exactly what you're looking for though

If you want something less acoustic I would suggest some subgenres of dungeon synth "fief" is a decent artist I think you may like.
