Vegetarian Chili--- for this cold ass weather.

Hey all! My friend sent me this really good chili recipe (very rough lol). The flavors are amazing and it's super easy (I mean, it's chili... so can't be too hard).


Serves 4
Ingredients:

1 Green Pepper, diced
1 White/Yellow Onion, diced
2 tbsp Chili Powder
1 tsp Cayenne Pepper
1 tsp Crushed Red Pepper
1 tbsp Garlic Powder
1 tbsp Onion Powder
2 tsp Dried Parsley
2 tsp Salt
1 tsp Dried Basil
1/4 tsp Ground Black Pepper
2 tsp Brown Sugar (if you like the little sweet taste, I personally do not use the brown sugar)
1 can of Red Kidney Beans (drained and rinsed)
1 can of Chickpeas (drained and rinsed)
1 can of Black Beans (drained and rinsed)
1 can of diced tomatoes with juices
Spicy v8 juice (or regular tomato juice)
Vegetable Broth
1 pkg of Morning Star Crumbles (or whatever meat substitute you like)

Heat a tbsp of olive oil, med-high heat, in a big chili pot. Sauté the onions and peppers until the onion is a little transparent. Add all the spices to the onion and peppers and mix well. Heat that for another minute or so. Add the beans, diced tomatoes, tomato juice and veggie broth (I add enough tomato juice to where it looks like chili and then add some veggie broth so the liquid isn't so thick). Cook, uncovered, until it is the consistency you are happy with!

Separately cook the meat substitute and add to the chili pot when your chili is all finished!
